How to make sauerkraut, with onions!

All this has is:

1. One white cabbage
2. One red cabbage
3. Two carrots
4. Three onions

Batch #4 - with chilli, fennel herb, carrot and red, white and spring cabbage

OK - this week I am trying something a little new (to me anyways): spicy sauerkraut! For this one I used:

Ingredients:

1 white cabbage
1 red cabbage
1 spring cabbage
6 carrots
1 big clove of garlic
1 chilli
2.5 tablespoons of sea salt (all the veg came to 2.5 kg)

Sauerkraut Batch #1 - with carrot, fennel and kohlrabi

Well, the moment you've all been waiting for is here - here is my first post on a batch of kraut. For this one we are using:

Ingredients:

1 white cabbage
1 red cabbage
1 bulb of fennel
1 carrot
2 heads of kohlrabi
1 biggish clove of garlic
3.5 tablespoons of sea salt (all the veg came to just over 3.5 kg)
